Why a sous vide bag is a different job
A freezer bag is sealed once and then left alone in still, dry cold. A sous vide bag is held at cooking temperature for hours, in moving water, often with liquid and fat inside it that get thinner as they warm. The specs that win a freezer comparison — bag thickness in mil, bar width for wide cuts — are not the ones that decide this. Two others are.
The double seal is the whole ballgame
A single weld that is 95% good is fine in a freezer and a failure in a water bath: water gets in, the bag floats, and the cook is ruined. A second parallel weld is cheap insurance, and it is the feature to look for.

If your machine has no double-seal mode, run the seal cycle twice with the bag shifted slightly. It is not as good as a purpose-built double weld, and it is much better than one pass.
Marinade: the problem externals cannot fully solve
An external sealer removes air through the open mouth of the bag. Liquid follows air. That is not a defect to engineer away; it is how the machine works. Wet modes reduce the suction so less liquid travels, which is why a wet-mode pack is a slightly softer pack.
The workarounds are the same ones our wet-meat guide covers: chill the marinade, freeze the portion on a tray before sealing, leave more headroom above the liquid, or fold a paper towel inside the bag mouth. A chamber machine skips all of it.

Note the bag-length row. A chamber machine caps what you can cook: the bag has to fit inside the box. For a whole rack or a long roast, an external with roll storage wins, and that is a real reason a sous vide cook might choose the Anova over the chamber.
When you do not need a sealer at all
Worth saying on a page that sells sealers: a great deal of home sous vide is done with a zipper bag and the water displacement method — lower the bag into the bath and let the water press the air out before you close the last corner. For a single steak in a two-hour cook, that is genuinely fine.
A sealer earns its place when the cook is long, when the bag has liquid in it, or when you are bagging a week of portions at once and want them to go from freezer to bath without repacking. That is the same trade we costed out in vacuum sealer vs Ziploc bags.

Do you need a vacuum sealer for sous vide?+
No. The water displacement method with a zipper bag works well for short cooks with little liquid. A sealer earns its place on long cooks, on bags containing marinade, and when you want to batch portions that go straight from the freezer into the bath.
How do you vacuum seal marinade for sous vide?+
Use the wet or liquid mode, chill the marinade first, leave headroom above the liquid, or freeze the portion flat before sealing. On an external sealer liquid always follows air toward the bar — a chamber machine is the only one that removes the problem rather than managing it.
Why did my sous vide bag leak or float?+
Almost always a seal that was weakened by moisture or fat at the weld line, and hours of hot water found it. Run a double seal, wipe the bag mouth before sealing, and leave more space between the food and the weld.
