LEM MaxVac 500 Review: The Sealer Rated for the Whole Deer

Almost no external sealer tells you how long it can run. LEM puts a number on it - 500 straight seals, up to five hours - and that single published figure is the whole reason to buy this machine.

Buy the LEM MaxVac 500 if you seal a heavy season in one or two long sittings — six or more deer, or a half beef — and you want the maker on record about how long the machine may run. LEM rates it at 500 consecutive seals over as much as five hours, which is the longest published continuous rating of any external sealer we cover. It takes bags up to 14 inches wide, lays a 4.8 mm seal, and carries a two-year warranty with LEM's lifetime customer support behind it.

Skip it if you seal one deer a year, or if most of what goes in the bag is wet. The MaxVac 250 covers a light season for less money in half the weight, and the 500 has no moist mode listed — on a sealer that pulls 21 in. Hg, that is the figure to argue with, not the duty cycle.

Nothing here is a test result. We do not run a bench. Every number below comes from LEM's own product page or the maker-supplied Amazon listing copy, cited under Sources.

500 seals, in deer

A duty-cycle rating is abstract until you convert it into packages. At the Ohio Division of Wildlife's measured average of about 52 pounds of venison per deer, one deer packaged into one-pound bags is roughly 52 bags, each needing one seal if you buy pre-cut bags.

That is the thing worth paying for, and it is easy to miss on a spec sheet. The limit on most external sealers is not vacuum or seal width — it is heat. Weston's Pro-2300 manual asks for at least 20 seconds between cycles with the lid open and warns that its thermal protector will shut the machine off for about 20 minutes if you ignore that. A machine that stops for 20 minutes in the middle of a processing day is a machine that decides when your day ends. LEM's answer is a built-in cooling fan and an aluminum body, and a number it is prepared to print.

The 4.8 mm seal and the 14-inch bar

Two numbers here do real work for game meat. The first is seal width: 4.8 mm. A wider weld is simply more material holding the bag closed, and in a chest freezer full of hard-cornered bone-in packages that get shoved around for a year, the seal is the part that fails. For comparison, LEM's own MaxVac 250 lays a 3 mm seal.

The second is the 14-inch bar. Burger goes in quart bags and nobody needs 14 inches for that — but a whole backstrap, a rolled roast or a rack of ribs does, and a bag that is an inch too narrow means cutting the cut. Eleven inches, which is where the MaxVac 250 stops, is the width that starts to bite on big pieces.

21 in. Hg: the honest weakness

This is where the MaxVac 500 is beaten on paper. Twenty-one inches of mercury is a solid working vacuum, but the Weston Pro-2300 publishes a double-piston pump rated up to 28 in. Hg — and the chamber machines pull harder still. If your buying question is “which sealer pulls the deepest vacuum,” the answer here is not this one.

Whether that matters depends on what you are doing. For freezing one-pound packages of venison for a year, the job of the vacuum is to get the air out so the surface cannot dry out and oxidize; the USDA's own position is that freezing keeps food safe indefinitely and that packaging is about quality, not safety. Twenty-one inches does that. Where deeper vacuum genuinely earns its money is dry aging and long sous-vide work, which is why the site keeps those recommendations separate — see chamber vs external for where the line actually falls.

No moist mode, and what to do about it

LEM does not list a moist or wet setting on the 500. This is the single most consequential omission on the spec sheet, because fresh-cut venison is wet, and an external sealer sucks air and liquid straight across the seal bar. Juice on the weld is how a seal fails three months later in the bottom of a freezer.

There are three honest workarounds, none of which require a different machine:

  • Chill the package firm before it goes in the bag. Thirty to sixty minutes on a tray in the freezer stops the juice moving. This is the fix that works best and costs nothing.
  • Blot the bag mouth and cuff it. Fold the top two inches of the bag outward while you fill, so the sealing zone never touches meat, then unfold it dry.
  • Give the bag headroom. Leave three inches above the meat so the liquid front never reaches the bar before the vacuum cycle ends.

Our how to vacuum seal wet meat guide works through all of this in order, and it is worth reading before the first deer rather than after the first failed seal.

MaxVac 500 or MaxVac 250

These are the two machines most people are actually choosing between, and LEM publishes enough to decide it without guessing.

Note the one row that goes the other way: the 250 lists a pulse function and the 500 does not. Pulse lets you stop the vacuum short by hand, which is exactly what you want on soft trim or a package that is starting to weep. Both machines pull the same 21 in. Hg, so you are not buying vacuum when you move up — you are buying run time, bag width, seal width and a second year of warranty.

The honest decision rule: at three to five deer, the 250 finishes the job and stores in a cupboard. At six or more, or any bulk beef, the 500's rated run is the difference between one session and several. The 6+ deer setup puts it alongside the grinder, stuffer and freezer that season needs — and a heavy season wants a stuffer with the same kind of published duty figures, which is what Weston vs LEM stuffers works through.

What it costs to feed

A sealer's purchase price is the smaller half of what it costs you. Bags are the recurring half, and the 500 gives you both options: pre-cut bags, or rolls through the built-in holder and cutter.

Pre-cut is faster and uses one seal per package; a roll is cheaper per bag and lets you size a bag to a backstrap. LEM's own quart bags list at 3.14 mil on LEM's product page — note that the Amazon copy for the same bags says 3.4 to 3.5 mil, which is the kind of discrepancy worth knowing about before you compare thickness across brands. We work the recurring cost out per deer and per season in what sealer bags cost per season.

Who should buy it

The MaxVac 500 is a specialist, and the specialty is volume in one sitting. If your processing day looks like two people, a folding table and a pile of trimmed venison that has to be in the freezer before bed, a published five-hour rating and a cooling fan are worth more than two extra inches of mercury you will never notice through a freezer door.

If instead you seal a deer a year, or your bags are usually wet, the money is better spent elsewhere: the wild game sealer roundup ranks the full field for exactly that buyer, and a chamber machine solves the liquid problem outright rather than working around it. Either way, read how to package deer meat first — the best sealer on the market cannot fix a package that was wrapped badly.

Questions

Frequently asked

How many seals can the LEM MaxVac 500 do in a row?
LEM rates it at 500 consecutive seals, over up to five hours of use. At the Ohio Division of Wildlife's average of about 52 pounds of venison per deer packaged into one-pound bags, that is roughly 9.6 deer in a single session with pre-cut bags.
What size bags does the LEM MaxVac 500 take?
Bags up to 14 inches wide, on a 14-inch seal bar. Length comes off a roll — the lid has a roll holder and cutter built in — so you can cut a bag to fit a backstrap rather than forcing it into a stock size.
Does the LEM MaxVac 500 have a moist setting?
None is listed on LEM's product page. Chill wet packages firm on a tray before bagging, cuff the bag mouth while you fill, and leave about three inches of headroom — our wet meat guide covers the full routine.
MaxVac 500 or MaxVac 250?
Both pull the same 21 in. Hg. The 500 doubles the rated run to 500 seals, takes 14-inch bags instead of 11-inch, lays a 4.8 mm seal instead of 3 mm, and carries two years of warranty instead of one. The 250 is half the weight and is the one that lists a pulse function. Three to five deer: the 250. Six or more: the 500.
Is 21 in. Hg enough vacuum for venison?
For freezing, yes — the packaging job is to get the air off the surface, and the USDA's position is that freezing keeps food safe indefinitely while packaging protects quality. Deeper vacuum earns its money in dry aging and long sous-vide, where a chamber machine is the right tool.
What warranty does the LEM MaxVac 500 have?
Two years, plus LEM's lifetime customer support — the longest term LEM publishes on its external sealers, against one year on the MaxVac 250.
